A good shot runs in about 25-30 seconds for about 18g dose at 1:2 ratio.
Taste
Weak means low flavor concentration. It tastes diluted, empty, or like “coffee water.” Weak is about intensity, not texture. A shot can be weak but not thin, though often they appear together. Harsh means unpleasant aggression: rough, sharp, drying, scratchy, burnt, astringent, or throat-catching. Harsh is not the same as “strong.” Strong can be good. Harsh makes you wince. Bitter is a taste. Think dark cocoa, burnt sugar, grapefruit peel, over-steeped tea. Sour is acidity that feels sharp or underdeveloped. Think lemony, salty, tart, green, or biting. Good has the falvours balanced, not too sour, not too bitter, just perfect.
Body
Thin means the texture/body is missing. It feels watery, tea-like, hollow, or disappears quickly. It can still be flavorful, but the mouthfeel is light. Heavy means the espresso feels dense, syrupy, coating, muddy, or cloying. Heavy is not automatically bad; some shots are pleasantly syrupy. It only becomes a problem if it feels too intense, muddy, or tiring. OK feels balanced and pleasant, with enough texture but not muddy or overwhelming.
